This morning I decided it was time to bake a batch of biscuits. There's nothing like the aroma of freshly cooked biscuits infiltrating your home. Why not join me in this endeavour?
I've prepared a mini-tutorial for you - it's really easy, so bake a batch and invite some friends to tea...will you?
MAXMOM's BATCH BISCUITS
(These biscuits freeze well)
INGREDIENTS:
250g Margarine/butter
250ml oil
250ml Castor sugar
250ml Icing sugar, sifted
2 eggs
5ml vanilla essence
5x250ml Flour
5ml Baking powder
5ml Cream of tartar
2ml salt
Coconut, chopped nuts or cherries to decorate.
METHOD
* Preheat oven to 180C
*Cream margarine and oil together
*Add Castor sugar and icing sugar, beat well.
*Add Eggs and Vanilla essence
*Sift dry ingredients together and add to mixture(Forms a soft dough)
* Roll into balls, press down and decorate.
Bake 15-20mins.
Remove from oven and allow to cool.

Okay,,first a question and I can make them. I can convert the measurements for sure but does castor sugar = granulated sugar AND icing sugar = confectioner sugar? I think that would be right. Then,,,did you crochet that tea cozy? It is beautiful! I would dearly love to sit with you and a batch of these and tea...what fun. Thank you for this versatile recipe.

ICING sugar is the sugar used for icing cakes. CASTOR sugar is a finer sugar - between icing sugar and granulated sugar. (I think the idea in this recipe is to use sugar which is the 'finest' - literally. They are trying to avoid the 'courser' sugars) I hope this makes sense. And yes, I did indeed crochet that tea cozy :)

The comment from Mrs JP reminds me of the difficulty I had in locating 'icing sugar' when I lived in the USA. Not to be had in Bartlesville Oklahoma in 1988, for sure. In the end a friend recommended I grind up some castor (or was it granulated) in my coffee grinder. Which turned out to be a messy business...
I think I was trying to make and ice a Sachertorte, and a couple of other key ingredients that were standard in UK shops also proved hard to find - ground almonds and what we would call dark chocolate, (which I later discovered is called 'semi-sweet' in the US).
Beware translating recipes!

See, we have extra fine granulated sugar...I might try running some of that thru the food processor to make it really extra extra fine sugar. AND then make one-half batch as a tester! How bad can it turn out :)

I wish I lived closer to try some! You've reminded me of a similar recipe I used to make that I decorated with a chocolate button (which is a flat approx. 2cm round of chocolate). It is a grey wet winter day here, so I may have to do some baking!
